Pear Loaf

With a slather of grass-fed butter, this could be a great breakfast bread. It's also ideal for kids' lunchboxes as it's nut-free!

With a slather of grass-fed butter, this pear loaf makes a great breakfast bread. It's also ideal for kids' lunchboxes as it's nut-free. You could omit the honey, making it purely sweetened with pears. There is also an option to add collagen powder for an extra boost.

Ingredients

2 ripe pears, peeled and grated · 2 eggs · 3 tbsp honey (optional) · ½ cup coconut flour · 1 tsp baking soda · 1 tsp cinnamon · Pinch of salt

Method

Preheat oven to 175°C. Whisk eggs with honey. Stir in grated pear. Fold in coconut flour, baking soda, cinnamon and salt until combined. Pour into a lined loaf tin and bake for 35–40 minutes until a skewer comes out clean. Cool before slicing.
